Organic Goat Cheese
The production of these cheeses is based on the milk from the farm itself, with Charnequeiras goats and Merino sheep from the Beira Baixa. The cheese is made with raw milk and is aged for 45 days.
Its aroma is strong and very peculiar, due to animal pasture-based food, mainly the goats that feed themselves from wild plants, more precisely cistus.
Organoleptic Characteristics: Through its rustic aroma and flavour, the cheese denotes the predominant vegetable feeding of the flock.
Shape: It has a low cylindrical shape with bulging sides and upper surface, without defined edges.
Crust: It has a soft, well-formed, smooth and thin rind, with a uniform straw-yellow colour. It has a malleable consistency, allowing some flexibility.

Composition: Raw goat's milk (Charnequeira), rennet and Salt.
